How much starter for 1000g flour?

The answer

Starter is usually given as a percentage of the flour. For 1000 g flour with a 100% hydration starter:

StarterGramsIts flourIts water
10%100 g50 g50 g
15%150 g75 g75 g
20%200 g100 g100 g
25%250 g125 g125 g

How it is worked out

Multiply the flour by the percentage: 1000 g × 20% = 200 g. A 100% starter is equal weights of flour and water, so each gram of it adds half a gram of each to the dough. The calculator below starts at 20% and 70% hydration as an example.
