How much starter for 500g flour?

The answer

Starter is usually given as a percentage of the flour. For 500 g flour with a 100% hydration starter:

StarterGramsIts flourIts water
10%50 g25 g25 g
15%75 g38 g38 g
20%100 g50 g50 g
25%125 g62 g62 g

How it is worked out

Multiply the flour by the percentage: 500 g × 20% = 100 g. A 100% starter is equal weights of flour and water, so each gram of it adds half a gram of each to the dough. The calculator below starts at 20% and 70% hydration as an example.
