How much starter for 400g flour?

The answer

Starter is usually given as a percentage of the flour. For 400 g flour with a 100% hydration starter:

StarterGramsIts flourIts water
10%40 g20 g20 g
15%60 g30 g30 g
20%80 g40 g40 g
25%100 g50 g50 g

How it is worked out

Multiply the flour by the percentage: 400 g × 20% = 80 g. A 100% starter is equal weights of flour and water, so each gram of it adds half a gram of each to the dough. The calculator below starts at 20% and 70% hydration as an example.
